Continuing with my freezer and pantry challenge I searched high and low for recipes using food items I had on hand with minimal purchases to be made.
This week’s menu:
Monday – The Cozy Cook’s Cheeseburger Pasta with lettuce, tomato, and pickles on the side.
We didn’t have this last Thursday so it’s on this week’s meal rotation and I’ll be using ground bison that I found at a local discount grocery store instead of ground beef.
Tuesday – Eating On A Dime’s Enchilada Casserole with lettuce, tomato, and sour cream (fat-free Greek yogurt for me)
Wednesday – Eating On a Dime’s Crockpot Italian Pork Chop Dinner … an afternoon of errands calls for a crockpot meal.
Thursday – Breakfast for dinner or leftovers
Friday – Chicken, Mushroom, and Zucchini Bake … I found this recipe on Facebook in one of my Weight Watcher’s groups, and it just sounded easy and delicious, plus each serving is low in points. This means I might be able to splurge and have a dish of Halo ice cream for dessert.
Saturday – Leftovers
Sunday – Marinara Meatball Subs for kids / Marinara Meatballs over low-carb noodles for hubby and me. Will serve with a side salad or fresh veggies with dip.
