Continuing with my freezer and pantry challenge I searched high and low for recipes using food items I had on hand with minimal purchases to be made.
This week’s menu:
Monday – Crispy Chicken Leg Quarters, sweet potatoes and a veggie
Tuesday – Greek Salad with chicken from Monday (will add chickpeas for added protein)
Wednesday – breakfast for dinner – egg sandwiches and pancakes
Thursday – Cheeseburger Pasta with salad on the side
Friday – 27th Wedding Anniversary … Easy Amish Meatloaf (my husband loves it!), mashed potatoes and seasoned green beans
Saturday – We’re taking the day to celebrate our anniversary so we’re eating out at a locally-owned Mexican restaurant
Sunday – Crockpot Easy Chicken and Dumplings my kids aren’t fans of peas so they will be served on the side.
