Continuing with my “eat from the freezer and pantry challenge” I imposed upon myself two weeks ago, here’s my menu from last week and the menu for the current week.
Last week’s menu:
Monday – fried pork chops because we ended up not having them from the previous week.
Tuesday – Leftovers
Wednesday – Breakfast Sandwiches
Thursday – Leftovers
Friday – Chicken Alfredo and garlic bread
Saturday – fried chicken, homemade mashed potatoes (normally I get the pre-made Bob Evans mashed potatoes), fried cabbage and corn.
Sunday – Navy Bean and Ham Soup w/sour dough baguette
This week’s menu:
Monday – homemade lasagna with parmesan broccoli
Tuesday – Spanish rice made with pork carnitas from my can-try.
Wednesday – Breakfast for Dinner: egg muffin sandwiches for 2, pancakes for 1, and scrambled eggs with sauteed veggies for me.
Thursday – Egg Roll in a Bowl
Friday – Oven-fried chicken drumsticks, rice with gravy, and California medley veggies.
Saturday – leftovers
Sunday – Brunch: Egg & Sausage Breakfast Rolls (I’ll be making mine with Pillsbury pizza dough). The recipe can be found here.
