This week’s menu is continuing our eat from the freezer and pantry challenge. Most of the ingredients I have in the freezer, pantry, or fridge. There will be just a few items I’ll have to buy to round out the meal.
Monday – Cajun Red Beans, Sausage, and Rice – a Weight Watcher’s recipe which I’ll make with chicken andouille sausage
Tuesday – Smoky Sweet Potato Fajitas – Sheet pan fajitas that I’ll bulk up by adding a large onion, strips of chicken thighs and homemade refried beans (or leftover Cajun red beans & sausage from Monday)
Wednesday – Breakfast for dinner – the family will let me know if they want pancakes, scrambled frittata or egg sandwiches.
Thursday – Marinated Grilled Chicken Breasts, baked sweet potatoes, and seasoned green beans.
Friday – Bison Burger Bacon Big Mac Wraps – sounds complicated but it’s easy peasy! I’ll make it with Bison meat instead of hamburger and we’ll add a strip of bacon to make it even more tasty!
Saturday – Take-out
Sunday – Crockpot Corned Beef with Carrots, Turnips, Onions, and Cabbage – this recipe calls for parsnips which I’ll replace with turnips and I’ll be using big chunks of onion instead of pearl onions.
