Menu Plan Monday March Week 2

I missed the boat last week on posting my Menu Plan Monday but that’s what happens sometimes when life gets you busy and you don’t have time to plan things and you end up just winging it. Now mind you, I don’t like living this way because I’m a planner so making up dinner on the fly always stresses me out and last week was no exception. Making a menu for the week or several weeks in advance helps me to know I can focus more on work and other important things surrounding my family and not stress at the last minute trying to figure out what to feed everyone.

This week I knew I had to get myself in gear so this weekend I asked some of my kids to give me an idea of what they wanted to see on the menu and I went from there. I took myself to Aldi this morning while my oldest daughter was getting her hair cut and as I was shopping I was mapping out my menu for the rest of the week and into next week. I feel so much better knowing now that I have a plan!

This week I have planned:

MondaySlow Cooker Chicken and Dumplings – this is my go to recipe I use because it’s so easy. I just leave out the peas and serve them on the side (or substitute with whatever veggie I have on hand).

Tuesday – Walking Tacos w/Chili Cheese Fritos

Wednesday – Breakfast for dinner – I make pancakes almost every Wednesday because it’s one thing that I know all of my kids will eat and because it’s the middle of the week it’s just so easy to make them. If I’m feeling extra then I’ll make scrambled eggs and maybe sausage patties to round out the meal.

Thursday – Butter Salmon, seasoned creamy rice (similar to a risotto) and California Medley.

Friday – Tater Tot Casserole … in an effort to use up leftovers I’ll use Tuesday night’s taco meat and add it to a pound of cooked ground beef to make the dish even more savory. If you’d like to know how I make the casserole, leave me a comment below.

Saturday – LEFTOVER Chicken and Dumplings and Tater Tot Casserole

Sunday – St. Paddy’s Day – Corned Beef Brisket with chunky potatoes and carrots cooked low and slow in the 7 qt slow cooker. In my smaller slow cooker I’ll have a head of cabbage cut into big chunks seasoned with half a stick of butter and Tony Chachere’s Creole Seasoning which we love in our house.

Backup plan: Ham & Turkey Sliders and French Fries
