Week 20 Meal Plan

It’s been weeks since I menu planned for one reason or another and it has caused me so much more stress. This week we are hoping to have out-of-town visitors for the weekend and I want to make sure I have delicious food for them to eat.  

Monday – green beans, potatoes, and smoked pork chops cooked in the Instant Pot for 15 minutes then natural pressure release.  

  • Fresh Green Beans (whole bag from Costco)
  • 1/2 package of smoked pork chops, approximately 1 cup chopped up. (could use ham if you prefer)
  • 5-6 small potatoes peeled and cubed
  • 4 cups of chicken or beef broth
  • Season to your heart’s content with your favorite spices. I like Kinder’s Buttery Steakhouse Rub or Dash Salt-Free Seasoning Blend

Tuesday – Chicken Salad with Grapes and ham & turkey with cheese sliders, using Hawaiian sweet dinner rolls, served with chips and fresh veggies on the side.  We’ll have Strawberry Fluff, AKA Strawberry Angel Food Cake for dessert.

Wednesday – my kids love Breakfast for dinner so pretty much every Wednesday this is what we’ll have. We have one of these sandwich makers and it works great! 

Thursday – Egg Roll in a Bowl over rice. I needed a new skillet but decided a wok would be even better and hold more food and I fell in love with this one

Friday – Crockpot Creamy Pierogi and Kielbasa Casserole

Saturday – grilled hamburgers and chips for lunch and California Medley Chicken over rice

  • 2 lbs of chicken breast, cut into approx 1 inch cubes
  • 1 large bag, approx 4-5 cups of frozen California Medley Vegetables (broccoli, cauliflower & carrots)
  • 1 small bottle of Zesty Italian Dressing, 16 fl oz
  • Cooked rice
Cook chicken in a pot with the oil from the zesty Italian dressing (carefully poured out into the pan) or use oil or butter of your choice to cook the chicken until no longer pink. Add vegetables and a bottle of zesty Italian dressing and transfer everything to an oven-safe pot. Cook in the oven for 30 minutes at 375. Serve over rice. 

– If curious I have a Char-broil grill that’s similar to this one but I’d LOVE to add to my grilling collection with this Blackstone Flat Top.

Sunday – Crockpot Cubed Steak served over mashed potatoes with green beans on the side.
